Overnight Raspberry or Blueberry Oats – Keeps you going for hours!

You will love this delicious, simple and easy to prepare oats, which takes 2 minutes to prepare, then you leave it in the fridge over night and presto, your breakfast is ready in the morning with no washing up. This is also a portable breakfast, as you can put it into a container or small paper bag and take it anywhere when you are travelling and just add yoghurt or milk to it. Never be disorganised for breakfast again! You can also prepare a weeks supply at a time, if you are time poor.  

Ingredients

3 half tablespoons of one minute organic oats

3 Tablespoons of frozen blueberries or raspberries

1/2 cup of natural yoghurt, no sugar (preferably fermented at home)

2 tablespoons of desiccated coconut

Cinnamon or vanilla

3 tablespoons of nuts of your choice

Method

  1. In a small bowl, combine the yoghurt and frozen raspberries, leave for a couple of minutes and then if using raspberries mash them through the yoghurt, for a lovely red colour and wonderful flavour. Both blueberries and raspberries are delicious.
  2. Add your quick oats, coconut and spices.
  3. Stir together, the consistency should be soft, so it may be necessary to add 2 Tablespoons of milk of your choice.
  4. Place in the fridge over night and enjoy the next morning.
