Low Carb and Low GI Fried Rice

You are going to love this delicious, simple to prepare, easy, low carb and low GI Fried Rice. It is an absolute family favourite.

Ingredients

1 and half cups of cooked non-starchy vegetables of your choice.

1 cup of cooked Low GI Doongara rice

2 eggs – made into an omelette and then diced

1 Tablespoon of Soy Sauce

2 Tablespoons Olive Oil

1 cloves garlic finely chopped or grated

Small pice ginger grated

Method

1. Heat a large frypan with the 2 Tablespoons of olive oil on a medium heat, gently cook the garlic and ginger for 2 minutes, then add the vegetables, stir and cook for about  4 minutes, then add the rice, soy sauce, and season if necessary. Just before serving stir through the diced omelette.
