You will love this delicious creamy curry, packed with fibre that is good for your gut microbiome.
Ingredients
1 cup of red lentils, organic if possible (which have been soaked for 7 hours in 3 cups of water and 1 T lemon Juice, then drained.) So, think ahead with this one.
1 can of organic coconut cream
1 teaspoon of cumin
1 teaspoon of coriander
1 teaspoon of turmeric
1 onion small diced
2 cloves garlic diced
1 pice of ginger finely grated 1 carrot diced
1 zucchini diced
2 Tablespoons of olive oi
Method
- In a medium saucepan, on a low to medium heat, place the 2 table spoons of olive oil and heat for a couple of minutes, then add the spices, onion, garlic and cook gently for a few minutes.
- Add the lentils, carrots, coconut cream and cook with the lid on and stir every now and again for about 5 to 10 minutes, until the lentils are just cooked.
- When just about cooked, and the lentils have absorbed all the coconut cream, add the zucchini and place the lid on for a few minutes. Do not overcook, you will need to taste and to see if the texture is how you like it. A good chef always tastes their food
