Banana & Oat Muffins

Banana & Oat Muffins

Ingredients          Method
1 cup of almond meal.

1 cup of one minute or quick oats

1/4 cup of liquid coconut oil or olive oil

3 small ripe bananas or 2 large ripe banana

2 eggs (60gram)

1/4 cup of sugar free choc bits

3 level teaspoons of baking powder

One quarter teaspoon of baking soda (be careful with this if you put too much, they will taste awful!)

 

 

1.Add 2 eggs to the mashed bananas and mix well.

2. Add the oil to the mashed bananas, choc bits, baking powder and baking soda and mix well.

3.Add the almond meal and oats, mix well.

4. Place into paper patty cases and bake in a pre heated 180 oven for 20 minutes.
