Ingredients Method
1/3 Grated Zucchini

2 eggs

Half of a slice of cheese, torn into small pieces

2 teaspoons of butter or coconut oil

  • Grate the zucchini into a small bowl, add the half slice of cheese, add the 2 eggs and beat with a fork.
  • Heat the butter in a small frypan, wait until it is moderate heat. Add the mixture, and place a lid on your small frypan, let it cook for a   couple of minutes, then turn the heat off and leave the lid on for another couple of minutes. It is better to cook eggs this way, as the carry-over heat in the pan cooks the eggs gently and they are delicious, eggs can be easily over cooked and become rubbery.
